The comparative abundance of potatoes in the diet means they are used to ‘bulk out’ produce in shorter supply and home cooks will often sauter carrots and potatoes together, or if only one or two cepès or a few girolles have been found, these seem to double or quadruple in the frying pan when mixed with potato, which easily takes on their perfume. In spring a few dandelion leaves or the young shoots known locally as responchous may be added to the pan.
