Heat the butter in a sauté pan until it is quite hot then throw in the salsify Season with salt and freshly ground black pepper and let the pieces take on colour like sauté potatoes. Turn them over from time to time. Serve with chopped parsley sprinkled over and also a little chopped garlic if wished.
