The spirit used depends on what is to hand. In the old days it would have been eau-de-vie from the plums in the garden. Depending on its strength this might be diluted with flavourless spirit. Alternatively, armagnac can be used, either on its own, or diluted with the spirit. The two kinds of brandy should not be mixed together. This recipe is adapted from the advice given by M.
