  • 20 to 25 green walnuts
  • 575 ml (1 pt) 40° alcohol for preserving fruit


Crush the nuts with a mallet. The young nuts are wonderfully juicy but you will find that they stain your hands dark brown, so use rubber gloves.

Put the pieces of crushed nut into a large glass jar which you have cleansed thoroughly, and pour in the alcohol. Add the clove and cinnamon, cover the jar and leave it in the sun for at least two weeks, preferably longer.
