Walnut leaves are used to produce an apéritif, particularly in areas which do not produce much wine. Tradition requires the young leaves to be picked before midsummer’s day, and this should be observed since the leaves which must be used are the very young ones, still a very fresh green in colour, tinged with crimson and slightly translucent. When handled they give off a strong aromatic scent.
