In the Ariège a variation on this theme is called Hypocras. This can be made from any wine, or from beer or cider, and can be flavoured with angelica, juniper berries, walnuts, orange, vanilla or whatever flavours you choose to infuse in it. Here is a typical example:

Ingredients

  • 500 ml (16 fl oz) sweet white wine

Method

Put all the ingredients into a bowl or jug to macerate for 24 hours. Strain into clean bottles and serve, either as an aperitif or after a meal.
