Name: Radishes with a Trio of Dips
Yield: Makes 12 Dips with Radishes
Ingredients: ¼ cup sour cream; 3 tablespoons finely chopped green onion, white and pale green parts; 1½ teaspoons minced fresh tarragon; ½ cup crumbed blue cheese; 3 bunches radishes, with their greens; 2 cloves garlic, crushed; 1 tablespoon red wine vinegar; 1 tablespoon tarragon vinegar or white wine vinegar; ½ cup top-quality mayonnaise; ¼ cup olive oil; 2 tablespoons whole milk, plus more if needed; Salt; 1 small red bell pepper; ⅓ cup toasted slivered almonds; ½ cup chopped tomato; 2 anchovy fillets, finely chopped; 1 tablespoon minced fresh chives; 2 tablespoons finely chopped fresh flat-leaf parsley

You can serve just one or two of these dips to your guests, but it’s fun to go overboard and offer a variety of options. No need to serve some of each dip to every guest. When I have a dozen friends over, I’ll put out four dishes of each and let them choose which they would like. If you are making just one or two dips, plan to double the dip recipes. Any extra green goddess or blue cheese dip makes delicious salad dressing. Romesco is wonderful spooned over roasted potatoes.
