Little Key limes seem to be traveling more these days. I’m able to buy good-sized bags of them at my neighborhood grocery store for just a few dollars. And they’re good for a lot more than just pie. The slightly more complex flavor makes for a particularly bright addition to a gimlet, though you can use regular Persian limes instead.

Ingredients

  • 8 thin slices Key lime or halved slices regular lime
  • 2 cups gin
  • ½

Method

Put the lime slices in 8 ice cube tray sections, fill with water, and freeze.

About 1 hour before serving, combine the gin, lime juice, and simple syrup in a cocktail pitcher. Stir to mix and refrigerate.

Just before serving, stir the seltzer into the gin mixture. Put the ice cubes in 8 small tumblers or stemless cocktail glasses and pour the gimlets over.
