500 g (1 lb) crown prince squash, butternut squash or another hard-skinned squash, peeled, seeded and cut into 2cm (¾in) cubes
Method
- Prepare the squash and set aside.
- Heat the oil and soften the onion in a large pan and then stir in the garlic and berbere for 2 minutes.
- Add the spinach with 1cm (½in) boiling water. Place the lid on to steam until just wilted.
- Next add the squash pieces and pour over another 100ml (scant ½ cup) boiling water. Stir the spinach and squash to
