Method

  1. First marinate the salmon. Lay the salmon on a good length of kitchen foil (enough to wrap it in) and prepare the marinade by mixing the mustard and 2 tbsp of the olive oil together with sea salt and freshly ground black pepper. Rub all over the salmon, wrap up and leave in the fridge overnight to soak up the flavours.
