  • 2 large red onions, each cut into 8 wedges

  1. In a heavy casserole pan, heat 2 tbsp of the olive oil and fry the onions for 10 minutes until starting to brown.
  2. Add the carrots and potatoes, and cook for 5-10 minutes until colouring a little.
  3. Meanwhile, mix the flour, salt and pepper together. Sprinkle over the beef cubes and toss so they’re lightly coated.
