Ingredients
- 3 tbsp olive oil
- 2 large red onions, each cut into 8 wedges

- In a heavy casserole pan, heat 2 tbsp of the olive oil and fry the onions for 10 minutes until starting to brown.
- Add the carrots and potatoes, and cook for 5-10 minutes until colouring a little.
