Ingredients: handful fresh parsley, chopped (for garnish); 2 tsp cracked black pepper; 700 g (1½ lb) braising beef, diced; 4 sprigs fresh thyme; 2 large red onions, each cut into 8 wedges; 3 tbsp olive oil; 3 carrots, peeled, halved lengthways and cut into 2cm (¾in) pieces; 1 l (4 cups) beef stock; 2 tsp salt flakes; 3 red potatoes, peeled and roughly chopped into 2cm (¾in) cubes; 3 tbsp plain flour

Method

In a heavy casserole pan, heat 2 tbsp of the olive oil and fry the onions for 10 minutes until starting to brown.
Add the carrots and potatoes, and cook for 5-10 minutes until colouring a little.
Meanwhile, mix the flour, salt and pepper together. Sprinkle over the beef cubes and toss so they’re lightly coated.
