Method

  1. Melt the butter in a large frying pan on medium heat and add the sugar to form a paste. Let the mixture thicken a little and caramelise for about 3 minutes.
  2. Working quickly, turn up the heat and fold in the banana slices, vanilla essence and a pinch of sea salt - don’t cook those bananas too long.
