An extremely versatile recipe that makes the most of Sunday lunch or Christmas dinner leftovers, making it the best Boxing Day breakfast. I prefer to make small patties that can either be baked or fried as it is easier for serving, but you can also cook it all together in the pan, the traditional way.

Ingredients

  • 3 tbsp vegetable oil
  • 1 onion, diced
  • about 500 g

Method

  1. Heat 1 tablespoon of the oil in a large frying pan over a low– medium heat and fry the onion for 5 minutes, until softened. Remove the pan from the heat.
  2. Pour the cooked onion into a large mixing bowl, along with the rest of the vegetables. Mash well to combine and season with salt and pepper.
