A bacon and egg butty might be the kind of thing you’d expect to never have again after going plant-based, but this version really hits the spot. It has all the familiar flavour and texture for a super-satisfying breakfast.

Ingredients

For the vegan fried egg

  • 45 g/ oz ( cup) gram flour (chickpea flour)

Method

  1. First, make the fried egg by adding the gram flour to a small bowl and slowly whisking in 120ml/4fl oz/½ cup water, along with the salt and pepper.
  2. Lightly grease a frying pan with oil and turn the heat up to high. Once really hot, pour the mixture into the pan to create a couple of fried egg shapes. You can use greased crumpet or egg rings to help retain a thi
