Light, aromatic and healthy, but oh so satisfying, this soup is perfect for winter or spring. Serve with some fresh crusty bread.

Ingredients

  • 1 tbsp vegetable oil
  • 1 white onion, roughly chopped
  • 3 garlic cloves, crushed

Method

  1. Heat the oil in a large saucepan and sauté the onion for 3 minutes, until softened. Add the garlic and ground coriander and cook for a further 2 minutes.
  2. Add the sweet potato, carrots and vegetable stock. Bring to the boil, then reduce to a simmer and cook for 15–20 minutes, or until the vegetables are tender.
  3. Tip everything into a blender, add the fr
