This is the soup I crave and make most often. Something about the combination of the sweet peas and the earthy, cheesy flavour makes it so moreish.

Ingredients

  • 1 tbsp vegetable oil
  • 1 white onion, roughly chopped
  • 1 celery stick, roughly choppe

Method

  1. Heat the oil in a large saucepan over a low-medium heat and sauté the onion, celery and leek for 8 minutes, until softened.
  2. Add the peas, vegetable stock and cashews. Raise the heat to high and bring to the boil, then reduce the heat to medium and simmer for 2 minutes.
