A fresh but satisfying salad that can be served warm or chilled. This makes the perfect barbecue side dish, if the weather allows it.

Ingredients

  • 500 g/1 lb 2 oz baby potatoes
  • 2

Method

  1. Add a pinch of salt to a large saucepan of water and bring to the boil. Cook the potatoes for 20 minutes, or until tender, then drain and leave to the side.
  2. Add the butter to the pan and cook the peas over a medium heat for 2–3 minutes until heated through.
  3. Remove the pan from the heat and add the rest of the ingredients, including the cooked potatoes
