A refreshing green salad to celebrate spring’s produce. This makes a great side dish or filling for a wrap, providing lots of crunch.

Ingredients

  • 200 g/7 oz asparagus
  • 3 spring onions (scallions), finely sliced<

Method

  1. Use a vegetable peeler to shave the asparagus spears lengthways into thin strips. Add to a large bowl along with the spring onions.
  2. Using a mandolin or small sharp knife, cut the radishes and cucumber into very thin slices. Add to the bowl.
