An easy one-pot weeknight dinner that makes use of any vegetables you need to use up in the fridge. One of my favourite variations is to add paprika and use red peppers instead of carrot, then serve with chickpeas.

Ingredients

  • 2 tbsp vegetable oil
  • 700 g/1 lb 9

Method

  1. Preheat the oven to 180°C fan/200°C/400°F/gas 6. Add the oil to a large roasting tray and put it in the oven to heat up.
  2. Put the potatoes in a large saucepan and cover with cold water. Bring to the boil and par-boil for 5 minutes. Drain
