Vegan sausages are not hard to find these days but sometimes it’s nice to make your own, especially if you have some mushrooms to use up. Serve with a mash that is just as creamy, buttery and comforting as the dairy-laden kind.

For the mash

  • 900 g/2 lb King Edward potatoes, peeled and diced

  1. Put the potatoes in a large saucepan and cover with cold water. Bring to the boil and cook for 20 minutes, or until very soft.
