The great thing about these dainty little sandwiches is that they instantly give a fancy tea party vibe but are so ridiculously simple to put together. The filling options are endless but I’ve included three of my favourites, which work well on both white and wholemeal bread.

Ingredients

Classic Cucumber

  • 6 medium slices of soft white bread
  • dairy-free butter or hummus, for spreading
  • ½ cucumber

Method

  1. Butter each slice of bread, then add your fillings.
  2. For the cucumber, first put the slices in a colander or sieve and sprinkle with the salt. Leave for approximately 15 minutes. Lay out a few pieces of kitchen paper and place the cucumber slices on top to absorb the excess moisture. Gently pat dry and arrange the cucumber slices on one half of the bread, slight
