A slice of rich, fruity tea loaf with a generous spread of dairy-free butter is one of my favourite things to have as an afternoon snack. To ensure a nice juicy cake, you’ll need to soak the fruit overnight, so make sure you allow time before you start baking.

  • 2 Earl Grey tea bags
  • 250 g/9 oz ( cups)

Method

  1. Pour 300 ml/10½ fl oz ( cups) of just boiled water into a large bowl and add the tea
