One of the things that I missed most when I cut out animal products, was Jaffa Cakes, so I was really pleased when I was able to create a vegan recipe that reminded me so much of the originals. These have a spongey base, orange jelly centre and are topped with crisp chocolate.

  • 70 g/ oz ( cup) self-raising (self-rising) flour

Method

  1. Preheat the oven to 160°C fan/180°C/350°F/gas 4 and grease a 12-hole shallow bun tin with oil.
  2. In a large bowl, mix together the flour, cornflour and sugar. Add the milk, vinegar, oil and vanilla and whisk everything to combine.
