The side dish I get most excited about is cauliflower cheese. That soft, creamy texture adds a whole new dimension to the meal. Sometimes I add in broccoli too, for some extra green.

  1. Bring a large saucepan of water to the boil and cook the cauliflower florets for 5 minutes, until beginning to soften, but still a little firm. Drain the cauliflower well in a colander, then tip into an ovenproof dish.
