This is perfect served just as it is, without decorating, but I love traditionally decorated Christmas cakes, with the layers of marzipan and fondant icing. You can also use royal icing to finish the cake.

Method

a day, or up to a week, before making the cake, soak the dried fruits in the ginger wine or brandy, giving it a stir every now and then.
Preheat the oven to 120°C fan/140°C/275°F/gas 1. Grease and line a deep 20cm/8in cake tin with greas
