I’ve had a few people tell me these are the BEST mince pies they have ever eaten. Just sayin’. They are so quick and easy to make, for a last minute festive treat.

Ingredients

  • 140 g/5 oz (heaped ½ cup) dairy-free butter, plus extra for greasing

Method

  1. Preheat the oven to 160°C fan/180°C/350°F/gas 4 and grease a shallow 12-hole bun tin with butter.
  2. Sift the flour into a large bowl and stir in the cornflour, sugar and salt. Add the butter and rub it into the flour with your fingertips.
