This takes a bit of time to make but the results are really worth it. Use it for making sweets, caramel and desserts.

Ingredients

  • 1 x 400 ml/14 oz can full-fat coconut milk
  • 150 g/

Method

  1. Pour the coconut milk into a medium saucepan, add the sugar and bring to the boil, stirring occasionally. Reduce the heat and simmer for up to 1 hour, or until the liquid is reduced to a thick condensed milk. Remove from the heat and allow to cool.
  2. Use straight away or store in an airtight container in the fridge for up to 2 weeks.
