A great all-round pastry for pies and tarts. It's easy to make by hand (cold hands work best) or in a food processor.

  1. If you are making by hand, sift the flour into a large bowl and mix in the salt. Add the butter in teaspoons and rub it into the flour with your fingertips until you have a sandy mixture. Pour in the milk, a tablespoon at a time, and mix until it comes together into a firm dough. If you are using a food processor, add the flour and butter to the processor bowl and pulse
