Name: Chicken Tikka with Rhubarb Mayonnaise

Ingredients: Thinly sliced red onion rings; Zest of an orange; ¼ cucumber, finely diced; Freshly milled salt and pepper; 4 heaped tbsp rhubarb puree; 1 packet of watercress or mixed salad leaves; 200 g chilled, cooked chicken pieces (roughly chopped); 2 sticks celery, finely diced; 400 g forced rhubarb; 100 g caster sugar; 4 heaped tbsp mayonnaise; 1 heaped tbsp rhubarb or mango chutney; 1 rounded tsp tikka paste

An unusual and intriguing recipe from Leeds schoolteacher, Linda Oldroyd. The Food and Drink programme on BBC set up a rhubarb recipe competition and Linda was asked to teach wine expert and presenter Oz Clarke how to cook with rhubarb.
