  • 2 oz [60 g] fresh ginger root, peeled and grated
  • ½ tsp ground ginger

Method

Combine the grated and ground ginger with the sugar, pepper, and salt.

In a large frying pan, heat a glug of neutral oil until almost smoking hot. Add the apples and pan fry until deeply caramelized, about 5 minutes.
