This is my favorite way to use up the inky black pot liquor from cooking black beans. I often remove the beans to use for something else, but you could also keep them in the soup to make it heartier. Feel free to substitute carrots, squash, or parsnips for the sweet potatoes. I’ve also added roasted corn to the mix. All of the vegetables can be cooked in the cooking liquid if you don’t want to turn on the oven, but they tend to lack the textural difference and added caramelized complexity o
