Accara are a beloved West African street food traditionally served with kanni, a tomato-based hot sauce. They are also great with any of the sauces listed below. Much like falafel, they can be served as a snack, an appetizer, or a side dish.

Method

Drain the black-eyed peas and remove the outer skins by rubbing the peas back and forth in your hands. Blend the skinless peas in a food processor with a bit of water to make a fine paste. It should be stiff but cohesive. Add the onion and salt and pulse to combine.
