Socca and farinata are two birds of a feather. The batter is the same texture; it is just cooked differently. Socca is cooked in individual pancakes, just as you would traditional flapjacks, and farinata is cooked as one giant pancake in the oven and cut into wedges to serve. Both can be served piled high with a fresh vegetable salad or with dipping sauces as an appetizer. The soda water gives the pancakes their bubbles.
