  • 2 grapefruit (about 8 oz [225 g]), ideally different colors

Method

Peel and segment the grapefruit and lay the segments on a serving platter. Scatter the chickpeas evenly over the grapefruit and top with the arugula leaves.

To serve, sprinkle the whole thing with salt, black pepper, and several glugs of olive oil and top with the Manchego ribbons.
