Mornay is a classic, made by enriching a basic milk sauce with cheese. It holds well if you want to make it in advance—simply rewarm over low heat. It is a great thing to have on hand when you need to make a quick meal feel rich and decadent. If you are limiting gluten, you can substitute the Mushroom Cream Sauce, which relies on reducing the cream as opposed to thickening the cream with a roux.
