Spoon bread or spoon pudding has the same basic ingredients as cornbread. Increasing the amount of liquid (water and milk) and the amount of fat (milk and butter) and lowering the baking temperature yields a more soufflé-like texture that must be “spooned” out of the baking dish, unlike a sliceable cornbread. Spoon bread can be made on its own and served as a side or can be studded with other ingredients throughout the seasons.
