Method

Warm the hominy and the peperonata.

Dress the arugula with a glug of olive oil and a pinch of salt.

Spoon the hominy into a serving bowl, top with the peperonata, and garnish with the arugula salad (adding a poached or soft-boiled egg would be very nice here too).
