In a pot, bring the horchata and chicken stock to a simmer with several pinches of salt. Place the chicken breasts in the liquid and poach gently until the chicken is cooked through, 8 to 12 minutes. Remove the chicken from the cooking liquid.
Bring the liquid to a boil, then remove from the heat. Add the rice and spinach and allow the spinach to wilt.
