Rabbit is one of the most sustainable animal proteins available. They have a low carbon footprint, they convert plants into protein efficiently, and they are, ahem, adept at procreation. Plus, rabbit is delicious. Farm-raised rabbit is very mild, juicy, and tender compared to her wild hare cousin. Try; don’t scoff. Of course, if you don’t have rabbit in your local market, really any protein will substitute; or leave it off entirely and you’ll be no worse for ware (rabbit).
