I hem and haw about my favorite way to cook salmon. On one hand, I love searing fillets to get a burnished, crispy skin. On the other, sliding a whole side of salmon into a low oven until meltingly tender without fear of overcooking, then serving it as a giant lovely centerpiece is pretty nice too. This recipe is written to make best use of the grill—low heat to cook the salmon and then high heat to char the green beans. Feel free to use an oven instead and then pan fry the green beans. It
