Mantis shrimp is the translation for this lovely shellfish but I bet not many people have heard of it in the UK! It is very common in the Mediterranean area, and goes by a number of names depending upon where you are in Italy... canocchie, pannocchie, cicale, sparnocchia and so on! I don’t mind what you call it, I just hope you adore this fish as much as I do.
With incredibly sweet, delicate and soft meat, they can be a pain to clean but once the job is done the cicale
