This plate of pasta is perfect for a summer lunch. Paccheri is a large shaped pasta, very traditional in the south of Italy, and goes perfectly with any kind of shellfish. Romanesco cauliflower isn’t largely common in the UK, yet it is extremely tasty with rich earthy flavour and pairs beautifully with fresh clams. I use bottarga to complement this dish. Bottarga are salted fish roe from tuna or mullet, very traditional in Sardinia.
