This is a traditional dish from my home region of Abruzzo, combining fresh homemade spaghetti dressed with a rich sauce of tomatoes and lamb, veal and pork. Chitarra literally means guitar, because this square spaghetti was traditionally made with a machine with strings that looked exactly like a guitar.
