Melanzane a barchetta is a very traditional recipe from Campania. It is a great alternative to the more classic and famous parmigiana, as it is dairy-free. Bursting with Italian flavours, these aubergine “boats” (that’s what barchetta translates to) are ideal for summer meals and are perfect for family lunches or buffets.
