This is an unusual creation of mine that works surprisingly well, evoking elegant and extremely tasty flavours. The smokiness of the aubergine is complemented by the tangy marinated mackerel, which is enhanced further by the flavours of the lovely burrata cheese, roasted tomatoes and basil.

As in every great risotto, the use of Carnaroli rice is recommended for the dish to be its best. This is definitely a distinctive recipe to try if you have important guests to impre
