This recipe is a match made in heaven. I usually prepare this dish for gala dinners as it is a sure-fire way to really impress guests. The John Dory is a flat white fish, like a lemon sole, turbot or brill. It is a very flavoursome and meaty fish, which is also tender, making it beautiful paired with asparagus and black winter truffle.

Ask your fishmonger to fillet the fish for you, as it is quite difficult to do.
