Ingredients: 100 ml sweet wine (Passito or Moscato); 80 g unsalted butter, at room temperature; 2 g ice cream stabiliser; 40 g caster sugar; 150 ml double cream; 6 g edible gelatine leaf; 100 g sugar; 250 g mascarpone; 80 g egg yolk; 125 g flour; 150 ml milk; 50 g whipping cream; 4 g edible gelatine leaf; 150 g sugar; 35 g sugar; 100 ml milk; 100 ml espresso; 25 g cocoa powder; 20 g sugar; 5 g edible gelatine leaf; 25 ml coffee liqueur; 150 g dark chocolate (55%); 4 egg yolks

This dessert is my take on the classic tiramisu, with an added twist of chocolate. It’s a fairly new creation of mine, but has been a success since I showcased it on BBC MasterChef: The Professionals. In the words of Marcus Wareing: “A classic and simple Italian dessert brought into the modern world.” For the more adventurous, I suggest putting some hazelnut into the tiramisu to add further texture.
