This dish is from Emilia Romagna, which is a very gastronomically renowned region, and not only for salumi and cheeses. This rosemary flavoured crispy flatbread made of flour, yeast, water and extra virgin olive oil will undoubtedly impress your guests.

Traditionally lard is used in this recipe, but I prefer a mix of extra virgin olive oil and a bit of butter. Make them a day in advance and keep them in air tight container.
