These little fragrant sour dough rolls with green olives are an ideal meal accompaniment.
They can also be served as a traditional afternoon snack with a slice of salame (cured meats).
For the dough, melt the yeast in the water. Slowly add all the other ingredients (except for the olives, flour for dusting and egg white) and mix in a bowl until the dough is smooth, even if still “watery”. Cover with cling film and let it prove for at least 2 hours at room temperature. After proving time, knead the dough with 250g of flour, and chopped green olives. Knead well until the dough
