Salsa verde is one of my favourite relishes. This is a traditional recipe from the northern region of Piedmont, but it is so popular that it has become a classic of Italian cuisine. This famous condiment made by parsley, mint and extra virgin olive oil was traditionally served with bollito misto (mixed boiled meat) but it works really well with any fish or vegetables, or you can simply serve it as dipping sauce with a selection of antipasti.
